Gluten Free Mediterranean Quinoa Salad
A flavorful medley of sliced kalamata olives, cherry tomatoes, cucumbers bell peppers and onions, tossed with quinoa in a balsamic vinaigrette. Serve with Milton’s Gluten Free Olive Oil and Sea Salt Crackers. (click for recipe)
Ingredients:
3 cups cooked quinoa
1 cup cooked chickpeas
½ cucumber, diced
1 cup cherry tomatoes, cut in half
1 orange bell pepper, diced
¼ red onion, minced small
½ cup crumbled feta cheese
¼ cup sliced kalamata olives
2 Tbsp toasted pine nuts
2 Tbsp chopped parsley or basil
1 tsp salt
½ tsp black pepper

Instructions:
Mix all ingredients together in a bowl and toss with a Balsamic Vinaigrette. Serve with your favorite Milton’s Gluten Free Crackers.
