Ingredients

For the Orange Sauce

  • 2 teaspoons freshly grated orange zest
  • ½ cup freshly squeezed orange juice, about 2 medium oranges
  • ⅓ cup brown sugar, tightly packed
  • 2 tablespoons white rice vinegar
  • 3 tablespoons tamari sauce
  • 2 teaspoons Sriracha
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 2 teaspoons cornstarch, dissolved in 1 tablespoon water

For the Chicken

  • Avocado oil for frying, enough to coat the bottom of the pan
  • 1½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 bag Milton’s Gluten Free Thin & Crispy Crackers, crushed
  • ¼ teaspoon kosher salt
  • 2 eggs, whisked
  • 2 scallions, thinly sliced

Optional, For Serving

  • Cooked rice
  • Steamed, roasted or sautéed vegetables

Instructions

  1. Cut the chicken into 1-inch pieces and season lightly with kosher salt.
  2. Add the whisked eggs to one shallow dish and the crushed Milton’s Gluten Free Thin & Crispy Crackers to another.
  3. Dredge each piece of chicken in the egg, then coat it in the crushed crackers, pressing gently so the crumbs stick.
  4. Heat avocado oil in a pan over medium heat.
  5. Cook the chicken for 2–3 minutes per side, or until golden, crispy and cooked through. Work in batches if needed so the pieces have room to crisp.
  6. Remove the chicken from the pan and set aside.
  7. In a bowl, whisk together the orange juice, orange zest, brown sugar, white rice vinegar, tamari sauce, Sriracha, ground ginger, garlic powder and cornstarch slurry.
  8. Pour the sauce into a clean pan and simmer until it thickens into a glossy orange sauce.
  9. Add the crispy chicken back into the pan and toss until each piece is evenly coated.
  10. Serve over rice with your veggies of choice, then top with sliced scallions. Enjoy.

For the best crunch, crush the crackers into fine crumbs with a few slightly larger pieces mixed in. The smaller crumbs help coat the chicken evenly, while the bigger bits bring that crispy, golden texture.
