Blueberry Ginger Parfait

Ingredients:
1 ½ cup frozen or fresh blueberries
2 Tbsp brown sugar
½ tsp ground ginger
¼ cup orange juice
1 bag of Milton’s Gluten Free Crispy Sea Salt Crackers
3 cups plain Greek yogurt (or more)
Instructions:
Combine blueberries, brown sugar and ginger in a small saucepan and stir in orange juice. Bring to a simmer over medium heat and cook for about 15 minutes, to reduce. Remove from heat and allow it to cool. Pulse crackers in a food processor until crumbled. Layer four half-pint jars with the crumbled crackers, yogurt, then blueberry sauce. Repeat with remaining ingredients. Serve immediately and enjoy!
