Healthy Taco Salad Bowl

Salad Ingredients:
(Serves two)
1/2 pound ground turkey
2 Tbsp coconut oil
1 Tbsp taco seasoning
1/4 onion, chopped
1/2 bell pepper, chopped
2 cups kale, chopped
1/4 teaspoon salt
½ cup corn
1 cup black beans
1 avocado
½ lime
Instructions:
In a nonstick skillet, warm half of the coconut oil on medium-high. Add ground turkey and taco seasoning. Break up the meat with a wooden spoon until fully cooked, about five minutes. Set aside. Sauté onion and bell peppers in remaining oil until soft, about five minutes. Massage kale with salt for one minute, until tender. Combine all ingredients in a bowl and top with cilantro lime crema and a generous squeeze of lime. Use Milton’s Gluten Free Fire Roasted Vegetable Crackers to scoop!
Cilantro Lime Crema
Ingredients:
1 cup raw cashews
1/2 cup water
Juice of 1 lime, roughly 1/4 cup
1/4 cup cilantro, stem on
1/4 tsp garlic powder
1/2 tsp salt
Instructions:
Add cashews into a small bowl with boiling water and cover. Soak for one hour.
Blend all ingredients in a high-speed blender for about 1-2 minutes, until creamy and smooth. Adjust lime and cilantro to taste.
