Ingredients
Crust:
- 2 cups Milton’s Gluten Free Crispy Sea Salt Crackers
- 3 Tbsp sugar
- 10 Tbsp melted butter
Filling:
- 1 cup peaches
- ¾ cup sugar
- 2 (8 oz) packets of cream cheese
- ½ tsp almond extract
- 2 large eggs
Peach Glaze:
- 1 cup sugar
- 1 cup water
- 1–2 large peaches
Instructions
1. Preparation:
- Preheat the oven to 350°F.
- Prepare a water bath by adding ½ inch of water to a large pan. Place the pan in the oven.
2. Making the Crust:
- In a food processor, blend Milton’s Gluten Free Crispy Sea Salt Crackers until finely ground into crumbs.
- Transfer crumbs to a bowl, stir in sugar, and mix well. Add the melted butter and stir until combined.
- Press the mixture firmly into a 9-inch pie pan, lining the bottom and sides evenly.
- Place in the refrigerator until ready to add the filling.
3. Making the Peach Filling:
- Blend 1 cup of peaches until smooth.
- In a food processor or with a hand mixer, beat the cream cheese and sugar until smooth.
- Add the almond extract, then mix in the eggs one at a time, just until incorporated. Be careful not to overwhip, as this can cause the cheesecake to crack.
- Fold in the blended peaches.
- Pour the filling into the prepared crust, leaving a little space at the top.
- Place the cheesecake in the water bath and bake for 1 hour.
- Once baked, let it cool, then refrigerate overnight.
4. Making the Peach Glaze:
- In a small pot, bring the water and sugar to a boil. Reduce heat to medium and simmer, stirring occasionally, until the mixture reduces by half and becomes thick.
- Let the glaze cool in the refrigerator.
