Gluten Free Cracker Encrusted Cod Fillets

Ingredients:

1 bag Milton’s Gluten Free Fire Roasted Vegetable Crackers

1 tsp Cajun seasoning (or chili powder)

1 tsp garlic powder (or onion powder)

1 tsp paprika (or cayenne pepper if you like spicy)

1 tsp dried parsley

2 tsp salt

1 egg

3-4 fish fillets (cod, halibut or tilapia are great options)

8-10 Tbsp Avocado oil (or other high heat safe oil)

Lime or lemon, to squeeze on top

Instructions:

Place the crackers, seasonings and salt in a food processor and pulse until finely ground. Add to a shallow bowl. Whip egg in a shallow bowl. Coat each piece of fish in the egg, then press fish filets into the cracker mixture one at a time. Once all the filets are coated, heat the oil in a pan on medium high heat. Cook the fish until crispy, then flip and cook the other side to your desired temperature (about 3 minutes on each side). Garnish with any fresh or dried herbs and serve with a salad!
